So I glanced through the baking thread and didn't see much about cupcakes! How twee are cupcakes?

So you take a basic cake recipe and the possibilities are ENDLESS! What's the most fun you've had making cupcakes - decorations and everything?

this is a very well timed new thread! i am somewhat preoccupied with cupcakes this evening, as it falls upon me to bake some tomorrow in honour of our lovely guests at indiepop sunday in brighton! but what kind of cupcake, is the vexéd question. vanilla? lemon? chocolate? - what kind of frosting? cream cheese? buttercream? shiny fondant? oh help. i'm thinking hundreds and thousands :D

(that's the colourful cake decorations i'm talking about, i'm not making 600,000 cupcakes)

so what was the nicest cupcake you ever had? i think my best ever cupcake was vanilla cherry with a white chocolate frosting. om nom nom, as they say.

Yeah, the possibilities are endless! I really doubt I will have the time, but I have the wild notion of making cupcakes for Popfest. I don't make cupcakes that often. A friend from work made some with little peanut butter cups inside - yum!

A lot of recipes call for boxed mix - yuck! I'm such a purist. If I make Popfest Cupcakes, I might just cheat, though, I'll be pretty busy. :)

my friend bought me this 3 dozen cupcake courier. It's kind of heavy even empty. I suppose it was built for the suburban housewife to courier cupcakes to barbeques in mini-vans, not for the subway rides during rush hour, but it's still fun.

Wow - that's serious. As I now work in the penultimate "suburban soccer mom" community, that would be the "bringing cupcakes to school" carrier!

I recently had my first cupcake-baking experience! I made vegan red velvet cupcakes (although they were actually brown- long story) and they were very tasty...although I have to admit, my attempt at the home-made icing didn't work. Maybe next time...

Ooh, I'm quite a big appreciator of baking cupcakes! I have to admit I make some smashing vegan ones. Yum. Also every year for my birthday I like to throw a Cupcake Moustachio Bashio (involving lots of cupcake icing remaining on some fake 'staches).

Cupcakes are probably the most adorable edibility!

Any good sites for vegan cupcake recipes? I'm allergic to dairy, so I cook vegan every now and then.

My icing was too hot when I put it on the cupcakes and it melted all over the place, big-time. It was fun, even though I made it from a box!

Awe no, icing disaster! I've made that mistake before...you have to wait until the cupcakes cool off!

For deliciously amazing vegan cupcakes, I hiiiiiighly recommend that you get this book (how ace is that name?):

can someone give me a good basic cupcake recipe (that will be foolproof even for an amateur baker) i know i had one but i can't find it anywhere! and a recipe for icing as well. doesn't have to be vegan or anything! just tasty and hopefully simple!

Here you go, Sandypops. This is a very basic recipe with vanilla buttercream frosting:

For the cupcakes:
150g butter, softened
150g sugar
3 eggs, beaten
1 tsp vanilla extract
150g self-raising flour, sifted
1 tbsp milk

For the frosting:
75g butter, at room temperature
150g icing sugar
2 tbsp milk
1 tsp vanilla extract

1. Preheat the oven to 180C/160C fan/ gas 4.
2. Cream together the butter and sugar until light, fluffy and pale.
3. Gradually mix in the beaten egg alternating with the flour to stop the mix from curdling. Finally, stir through the vanilla extract and milk
4. Place 12 paper cupcake cases into a muffin tin and divide the mixture between them.
5. Bake for 15-20 minutes until golden and springy to the touch. Remove from the oven and cool on a wire rack.
6. For the frosting: in a mixing bowl beat the butter with a spoon or spatular until smooth, then start to sift in the icing sugar, stirring regularly. Add the vanilla extract and milk. The frosting should be light and creamy.
7. If you want to make the frosting colourful, mix food colouring into the icing to give an even colour.
8. Once the cupcakes have completely cooled down, spoon or pipe the icing onto your cupcakes and top with decorations.

For a cream cheese frosting:
225g cream cheese
55g butter, softened
125g icing sugar
1 tsp vanilla extract

these are just about ready to go in the oven! i think i've fucked it up though. the mixture is not very runny at all :\ also, do how full do i fill the tiny little cupcake cases? i think i've underfilled them but i'm not sure.

Oh no, they didn't turn out as biscuits did they?

I steal 90% of the my recipes from this website: http://www.joyofbaking.com/ . They're all pretty fail-safe in my experience and it's written by a woman who gives good baking advice and tells you a bit about the history of the recipe too, which is always nice (well... I think so, anyway). Her red velvet cupcake recipe is amazing and highly recommended when you're at the more adventurous stage.

they actually turned out fine! marianthi kinda saved me in my moments of panic up there. it was pretty encouraging to have them turn out nice AND taste good!
